JAPAN: SHIKOKU
A Production in Coorporation with ANA All Nippon Airways
A long-awaited trip to the island of Shikoku brought me to one of the last traditional soy breweries of Japan, using wooden kioke barrels.
It’s a real triumph-over-the-odds story - the last producer of the barrels is about to close down, and so the Yamaroku crew have had to learn this complicated craft of barrel-making themselves, so the traditional brewing of soy sauce can live on. Follow their story in my video.
